Restaurant Manager

We are looking for a manager that has the ability to think outside the box an run a restaurant from the ground up. Somebody that has experience in both font and back of house is a must, preferably somebody with a passion for «ouma se kos» the kind of food that you ate at your mother’s or grandmother’s Sunday table.
You will be required to run day to day operations of a small yet well-established restaurant with attached meeting room, the restaurant forms part of a hotel so you might be required to work an evening shift when called for, the applicant should understand that this roles requires flexibility & someone who can juggle the responsibilities of all sides of a restaurant operation.
Key focus points:
-Breakfast service including Barista duties as well as guest service (Speciality coffee experience a must)
-Full Lunch service as well as food preparation & drinks service
-ensuring FOH & BOH are both fully equipped & ready for each meal period
-Maintaining stock levels throughout Hotel & Restaurant
-Purchasing all stock needed for service periods not excluding the odd Dinner & ensuring par levels are adhered to based on Hotel occupancy & estimated Lunch numbers
-Quality control a must, keen eye for detail & able to work within the scope required
-Training of new staff on policies & procedures as well as understanding the steps of service
-Ensuring a good communication line between Front Office & the Restaurant for new guest arrivals, Functions & any dietary requirements
